Ingredients
  

  • 1 1/3 cup all-purpose flour 170 g
  • 1/3 cup powdered sugar 50 g
  • 1/2 teaspoon kosher salt 2.5 g
  • 2 teaspoons matcha powder
  • 150 grams unsalted butter room temperature, cut into pieces | 2/3 cup unsalted butter (room temperature)

Instructions
 

  • Make the Dough: In a large bowl, cream softened butter and powdered sugar until smooth. Add matcha powder and salt, mixing until fully incorporated. Gradually add flour and mix until the dough comes together.
  • Shape and Chill: Roll the dough into a log about 4 cm in diameter and 22 cm long. Wrap it in plastic wrap and chill in the refrigerator for 30 minutes.
  • Slice and Bake: Preheat the oven to 325°F (160°C). Slice the chilled dough into 1 cm thick rounds and place them on a parchment-lined baking sheet. Bake for 12-15 minutes until the edges are lightly golden. Let the cookies cool completely.
  • Melt the Chocolate: While the cookies cool, melt white chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.
  • Dip the Cookies: Dip half of each cooled cookie into the melted white chocolate, allowing excess to drip off. Place on parchment paper to set. Optionally, sprinkle a pinch of matcha powder for decoration before the chocolate hardens.
  • Set and Serve: Allow the chocolate to fully set before serving or storing. Enjoy these matcha shortbread cookies with tea, coffee, or as part of a festive cookie platter.
