Total Time 1 hour hr 30 minutes mins
- 1 1/3 cup all-purpose flour 170 g
- 1/3 cup powdered sugar 50 g
- 1/2 teaspoon kosher salt 2.5 g
- 2 teaspoons matcha powder
- 150 grams unsalted butter room temperature, cut into pieces | 2/3 cup unsalted butter (room temperature)
Make the Dough: In a large bowl, cream softened butter and powdered sugar until smooth. Add matcha powder and salt, mixing until fully incorporated. Gradually add flour and mix until the dough comes together.
Shape and Chill: Roll the dough into a log about 4 cm in diameter and 22 cm long. Wrap it in plastic wrap and chill in the refrigerator for 30 minutes.
Slice and Bake: Preheat the oven to 325°F (160°C). Slice the chilled dough into 1 cm thick rounds and place them on a parchment-lined baking sheet. Bake for 12-15 minutes until the edges are lightly golden. Let the cookies cool completely.
Melt the Chocolate: While the cookies cool, melt white chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.
Dip the Cookies: Dip half of each cooled cookie into the melted white chocolate, allowing excess to drip off. Place on parchment paper to set. Optionally, sprinkle a pinch of matcha powder for decoration before the chocolate hardens.
Set and Serve: Allow the chocolate to fully set before serving or storing. Enjoy these matcha shortbread cookies with tea, coffee, or as part of a festive cookie platter.
